It depends on the cake. We use yoghurt, flaxseed meal, vinegar with baking soda, or banana — different substitutes work better for different recipes. For a chocolate cake, a combination of vinegar and baking soda gives the best lift. For denser cakes, yoghurt works beautifully. We don't use one shortcut for everything — we match the substitute to the recipe.
